Ingredients
  

For the Noodles

  • 8 oz fresh or dried noodles (e.g., egg noodles, rice noodles, or udon)
  • 2 tbsp vegetable oil (canola or sesame oil recommended)

For the Protein (Optional)

  • 1 cup sliced chicken, beef, tofu, or shrimp

Vegetables

  • 1 cup shredded cabbage
  • 1/2 cup julienned carrots
  • 1/2 cup sliced bell peppers (any color)
  • 1/2 cup chopped green onions
  • 2 cloves garlic, minced
  • 1/2 inch fresh ginger, grated

Sauce

  • 3 tbsp soy sauce (low sodium preferred)
  • 2 tbsp oyster sauce (or hoisin sauce for a vegetarian option)
  • 1 tbsp dark soy sauce (optional, for deeper color and flavor)
  • 1 tbsp honey or brown sugar
  • 1 tsp sesame oil
  • 1/4 cup chicken or vegetable stock (optional, for extra sauciness)

Garnishes

  • Sesame seeds
  • Additional green onions (sliced)

Instructions
 

  • Prepare the Noodles:
    Cook the noodles according to package instructions until al dente. Drain and toss with a teaspoon of sesame oil to prevent sticking. Set aside.

  • Cook the Protein: (Optional)
    Heat 1 tablespoon of oil in the wok over medium-high heat. Add your protein choice and stir-fry until cooked through. Remove and set aside.

  • Stir-Fry the Vegetables:
    In the same wok, heat the remaining 1 tablespoon of oil. Add garlic, ginger, and green onions. Stir-fry for 30 seconds until fragrant. Add cabbage, carrots, and bell peppers. Cook for 3-4 minutes until the vegetables are tender but still crisp.
  • Combine Everything:
    Return the protein to the wok. Add the noodles and toss to combine. Pour the sauce over the mixture and stir well to coat evenly. Stir-fry for another 2-3 minutes.

  • Garnish and Serve:
    Sprinkle with sesame seeds and additional green onions. Serve hot.
